  • 800grams canned lentils, drained
  • 4 eggs
  • 200grams brown onions, diced
  • 2 clove garlic, crushed
  • 1 cup tomato ketchup
  • 400grams pumpkin, peeled and diced
  • 400grams sweet potato, peeled and diced
  • 2 stick celery, washed,diced
  • 200grams green capsicum , deseeded and diced small
  • 200grams sauted mushrooms, diced small
  • 800grams potatoes, diced, steamed, peeled
  • 2teaspoons sumac
  • 1 lime, zested
  • 1 bunch coriander, washed and stalks removed roughly chopped
  • 2teaspoons vegetable stock powder
  • few grinds salt and black pepper
  • 2 cup wholemeal breadcrumbs
  • 1/2 cup fresh herbs, chopped

Method

Step 1 of 7

Steam the vegetables till soft with coriander and lime zest. Preheat oven to 160C normal or 150C fan forced.

Step 2 of 7

Mash the vegetables roughly, should be still lumpy but soft as it needs texture, let it cool for about 10 minutes

Step 3 of 7

Add the lentils, eggs, stock powder, sumac, crumbs, seasoning mushrooms and garlic

Step 4 of 7

Don't over mix this needs texture

Step 5 of 7

Form into loaves using a gloved hand or a spatula, coat with the ketchup

Step 6 of 7

Cook in oven 160C normal or 150C fan forced For 30 minutes or until set and 75C or over when probed top with chopped fresh herbs of your choice

Step 7 of 7

Leave to settle for five minutes before slicing
