  • 30grams butter
  • 2 carrots, sliced
  • 6 mint, sprigs (extra to serve)
  • 1kilograms small washed potatoes
  • 1 pinch pepper (for seasoning)
  • 1 pinch sea salt ground (to taste)

Method

Step 1 of 3

Cook potatoes in boiling, salted water with mint for 6 minutes.

Step 2 of 3

Peel and slice carrots and add to pan with potatoes and cook for a further 5 minutes. Drain and return to pan.

Step 3 of 3

Add butter, salt and pepper and toss over heat for a few minutes until coated with butter. Transfer to a serving bowl, add extra mint leaves and serve.
