Method
Step 1 of 2
Preheat oven to 160°C. Wash 1/2 cup pumpkin seeds well, removing flesh, and place in a saucepan. Cover with water and add 1/2 tsp salt. Bring to the boil and cook for 10 minutes. Drain and pat dry with paper towel.
Step 2 of 2
Toss seeds with 2 tsp extra virgin olive oil and 1/2 tsp salt flakes. Spread out in a single layer on an oven tray and roast for 12-14 minutes or until lightly coloured.
