  • 16 small swiss brown mushrooms
  • 2 zucchini, cut into 2cm pieces
  • 1 lime, cut into wedges (to serve)
  • 200grams avocado & chilli lime dip
  • 250grams cocktail truss tomatoes
  • 250grams halloumi, cut into 2cm cubes

Method

Step 1 of 3

Place zucchini in a bowl and cover with boiling water. Stand for 1 minute or until softened. Drain and rinse under cold water. Pat dry with paper towel.

Step 2 of 3

Alternately thread zucchini, tomatoes, mushrooms and halloumi onto skewers.

Step 3 of 3

Heat a chargrill pan over medium heat. Cook skewers for 2 minutes each side or until charred and golden. Serve with dip and lime wedges.
