  • 1 1/2 cup carrot tops
  • 1 cup flat-leaf parsley leaves
  • 1/2 lemon, zested
  • 2tablespoons capers
  • 3/4 cup olive oil
  • 1/2 cup pistachios
  • 1 clove garlic, crushed

Method

Step 1 of 2

Wash carrot tops thoroughly to remove grit. Drain well and pat dry with paper towel. Chop and place in a small food processor with pistachios. Process until chopped. Add parsley, capers, garlic and zest and process until fine, occasionally scraping side of bowl.

Step 2 of 2

With motor running, gradually add oil, reserving 2 tbs, until well combined. Transfer to a container and smooth surface. Pour reserved oil over the top to cover. Seal and refrigerate until needed.
