  • 3 cloves garlic, thinly sliced
  • 1teaspoons smoked paprika
  • 2teaspoons celery salt
  • 12 large green king prawns, shelled, tails intact
  • 1/4 cup vodka
  • 800grams cherry tomatoes in tomato juice
  • 1teaspoons caster sugar
  • 1/2teaspoons Tabasco sauce
  • 1/2 bunch celery , stalks cut into batons, leaves coarsely chopped
  • 1 lemon, cut into wedges

Description

Enjoy these scrumptious prawns and their juicy, Tabasco-spiked tomato broth alongside the funky, fresh drink that inspired them.

Swap tip:
Swap vodka for tequila, white wine or champagne. For a non-alcoholic version, omit vodka and replace it with white wine vinegar.

Method

Step 1 of 3

Heat oil in a large frying pan over low heat. Add garlic and cook for 2 minutes or until fragrant. Stir in paprika and 1 1/2 tsp celery salt. Cook, stirring for 1 minute, then increase heat to medium. Add prawns and cook for 1 minute each side or until charred. Transfer prawns to a plate and cover to keep warm.

Add vodka to pan and deglaze for 2 minutes or until vodka has evaporated by half. Add tomatoes, sugar and sauce. Increase heat to high and bring to the boil. Reduce to low and simmer, stirring occasionally, for 15 minutes or until sauce has thickened.

Step 3 of 3

Return prawns to pan for 1 minute or until warm. Remove from heat and top with celery leaves. Serve with celery sticks, lemon wedges and remaining celery salt.
