- 1/4 cup extra virgin olive oil
- 3 limes, 2 tsp zested, juiced
- 1 1/2tablespoons honey
- 1/4 cup white rum
- 1 bunch mint, leaves picked, 1 tbs chopped
- 1.20kilograms watermelon, rind removed, cut into chunks
- 2 Lebanese cucumbers, thinly sliced into rounds
- 1 bunch radish, trimmed, thinly sliced into rounds
- 50grams Danish feta, crumbled

Description
Inspired by the zesty, lime-packed beverage, this salad is packed with crunchy cucumber, radish, feta and mint alongside juicy fresh watermelon.
For a non-alcoholic version, omit white rum and replace it with white wine vinegar or white balsamic.
