Rocket dressing
- 60grams baby rocket leaves
- 1/4 bunch basil, leaves picked
- 20grams parmesan, grated
- 1/2 cup extra virgin olive oil
- 1 lemon, juiced
- 2.25kilograms Macro free range whole chicken
- 100grams unsalted butter, softened
- 1 lemon, zested
- 4 cloves garlic, crushed
- 3 yellow peaches, cut in half
- 60grams baby spinach leaves

Description
This delicious grilled whole chicken with sweet peaches and a tangy rocket dressing will blow your guests away this Christmas.
Instruction tip
Use-it-up tip:You could also use leftover herbs, such as parsley, in the dressing instead of basil, or swap the baby rocket for baby spinach.
Method
Step 1 of 6
Preheat a barbecue grill (with hood) on medium heat, with hood closed. Pat chicken dry with paper towel. Place on a chopping board, breast-side down, with the cavity facing you. Using kitchen scissors, cut along both sides of the backbone and discard. Open out chicken. Turn over. Press down with the heel of your hand, to flatten.

Combine butter, lemon zest and garlic in bowl. Season. Run your finger between chicken skin and flesh on breast and legs to create a pocket. Push half of the butter mixture under skin. Gently rub skin to evenly distribute butter.

Cook chicken, skin-side down, on greased grill for 5 minutes or until skin is golden and crisp. Turn. Dollop with remaining butter mixture. Close hood. Cook for 50 minutes or until cooked through and golden. Transfer to a plate. Cover loosely with foil. Stand for 10 minutes to rest.

Meanwhile, while chicken is resting, add peaches to the grill, cut-side down. Cook for 4 minutes or until lightly charred.

To make rocket dressing, place rocket, basil and parmesan in a small food processor and blitz until finely chopped. While the motor is operating, add oil and lemon juice in a slow, steady stream.
Step 6 of 6
Cut chicken into portions and arrange on a serving tray with peaches. Serve with spinach and drizzled with dressing.
