Apple slaw
  • 1/2packets Woolworths finely shredded coleslaw 300g
  • 1 Granny Smith apple, julienned
  • 1/3 cup Greek-style natural yoghurt
  • 3teaspoons smoked paprika
  • 1teaspoons mixed spice
  • 1kilograms Wooloworths pork ribs
  • 1 cup apple juice, plus 1 tsp
  • 1/2 cup rum
  • 1/2 cup maple syrup
  • 1/4 cup apple cider vinegar
  • 1/2 cup barbecue sauce

Description

Rum, maple syrup and barbecue sauce are the key players in these super-succulent and sweetly savoury ribs. You won't stop at just one.

Method

Step 1 of 4

Preheat oven to 160°C/140°C fan-forced. Combine spices in a small bowl. Remove the membrane from the back of the ribs. Place ribs in a deep-sided roasting pan and rub spice mix over ribs. Pour 1/2 cup apple juice in the base of the pan. Cover with foil and bake for 1 hour and 30 minutes.

Meanwhile, combine rum, syrup, vinegar, sauce and cup remaining apple juice in a medium saucepan over high heat. Bring to the boil. Reduce heat to medium and simmer for 15 minutes or until mixture has reduced and slightly thickened.

Step 3 of 4

Remove ribs from oven and increase temperature to 230°C/210°C fan-forced. Brush ribs with glaze and bake for 10-15 minutes, basting halfway, or until sticky and charred.

Step 4 of 4

To make apple slaw, combine coleslaw and apple in a serving bowl. Mix together yoghurt and remaining apple juice in a separate bowl. Drizzle yoghurt mixture over slaw. Cut ribs into portions and serve with slaw.
