  • 600grams chicken wings
  • 1/4 cup white wine vinegar
  • 1/2 medium leek, only the white part, chopped
  • 1 1/3 cup hot sauce
  • 150grams butter

Description

A staple of the American food scene these tangy spicy wings pack quite the punch but have a buttery smooth finish.

Method

Step 1 of 7

Pre-heat the oven to 170°C.

Step 2 of 7

Bake the wings in the oven for 30 minutes.

Step 3 of 7

In a pan on a medium heat, cook the leeks in the vinegar for 5 minutes until the vinegar starts to evaporate.

Step 4 of 7

Now add the hot sauce and cook for a further 5 min until it starts to bubble. Remove from the heat and whilst blending incorporate the knobs of butter slowly to thicken the sauce.

Step 5 of 7

After it has cooled, blend the sauce together and then pour into a bowl.

Step 6 of 7

Remove the wings from the oven, and shallow fry them for 6 minutes.

Step 7 of 7

Remove the wings from the fryer and place into the sauce bowl, add the sauce and toss. Serve with your choice of dip.
