  • 750grams Gold bacon wrapped beef roast with truffle paste
  • 500grams brushed potatoes, peeled, quartered
  • 1/4 cup extra virgin olive oil
  • 1 head garlic, halved
  • 240grams green beans, steamed
  • 320grams asparagus

Method

Step 1 of 3

Place potatoes in a large saucepan and cover with water. Bring to boil over medium heat, then boil for 10 minutes or until tender when pierced with a skewer. Drain well, then return to saucepan. Add oil and shake potatoes until surface is roughed up and coated in oil. Season.

Step 2 of 3

Preheat oven according to beef roast packet instructions. Remove beef roast from packaging and transfer to a roasting pan. Add potatoes to pan and bake following packet instructions.

Step 3 of 3

Cover pan loosely with foil and allow to beef roast to rest. Slice beef, then serve with potatoes and steamed beans and asparagus.
