  • 500grams Woolworths simply steam baby white potatoes
  • 600grams Woolworths pork loin roast with herbs & spices
  • 1/3 cup extra virgin olive oil
  • 100grams Greek-style feta, crumbled
  • 1 1/2tablespoons red wine vinegar
  • 2 tsp wholegrain mustard
  • 1/2 bunch chives, finely chopped
  • 1/4 bunch dill, leaves picked, finely chopped
  • 60grams baby rocket

Looking for a delicious family-friendly dinner recipe? Make this magnificent pork roast with a warm, herby roasted potato salad.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Microwave potatoes according to packet instructions. Cool for 5 minutes, then halve.

Step 2 of 4

Place pork and potatoes in a large roasting pan and drizzle with 1½ tbs oil. Roast for 30 minutes. Scatter feta over potatoes. Roast for a further 20 minutes or until pork is cooked through and potatoes are golden and tender. Loosely cover with foil and rest for 20 minutes.

Step 3 of 4

Meanwhile, place vinegar, mustard, chives, dill and remaining oil in a screw-top jar. Season with pepper. Secure lid and shake to combine.

Step 4 of 4

Transfer potato mixture to a large bowl and drizzle with 2/3 of the dressing. Transfer pork to a board. Slice and serve with potato mixture, rocket and remaining dressing.
