For the stuffing
  • 50grams tomatoes, chopped
  • 200grams ciabatta bread, grated
  • 1/3 cup olive oil
  • 8teaspoons red wine vinegar
  • 4 medium shallots, sliced
  • 1tablespoons basil, chopped
  • 1tablespoons oregano, chopped
  • 4 cloves garlic, peeled and chopped
  • 1 pinch salt
  • 1 pinch pepper
  • 1kilograms lamb saddle
  • 4tablespoons canola oil

Description

A delicious BBQ main with a stuffing bursting with aromatic flavours to compliment the charred sweetness of the lamb.

Method

Step 1 of 4

Pre-heat the oven to 200°C. In a mixing bowl, combine all the stuffing ingredients.

Step 2 of 4

Now stuff the lamb saddle with the panzanella stuffing. Cover the lamb in the canola oil and then wrap in tinfoil.

Step 3 of 4

Bake the stuffed saddle in the oven for 20 minutes. After 20 minutes, you can remove from the oven and then prepare to cook on the BBQ.

Step 4 of 4

You can lower the oven temperature also to 180°C to bake if you do not wish to BBQ. BBQ or bake the lamb for 1 hour or until its cooked fully.
