  • 2teaspoons chilli flakes
  • 1/2teaspoons ground cinnamon
  • 1tablespoons ground coriander
  • 1tablespoons ground cumin
  • 1teaspoons garlic powder
  • 1tablespoons Italian dried herbs
  • 1/2teaspoons ground nutmeg
  • 1 lemon, rind finely grated
  • 2teaspoons dried oregano
  • 1teaspoons onion powder
  • 1teaspoons ground black pepper
  • 10milliliter olive oil (drizzle)
  • 8 lamb cutlets
  • 1teaspoons dried parsley flakes

Method

Step 1 of 2

To make a rub, combine all ingredients in a snap-lock bag. Add 8 lamb cutlets. Seal bag and rub well to coat. Refrigerate for 1 hour.

Step 2 of 2

Preheat a barbecue grill on medium. Drizzle a little olive oil into bag with cutlets. Rub together well. Transfer cutlets to a preheated grill plate for 2-3 minutes each side, for medium, or until cooked to your liking.
