  • 2 cloves garlic, crushed
  • 4 anchovy fillets, drained
  • 1 bunch mint, stem removed
  • 1/4 cup continental parsley, leaves only
  • 12 lamb cutlets
  • 1tablespoons capers, drained
  • 1 pinch chilli flakes
  • 1tablespoons paprika smoked
  • 1tablespoons thyme leaves
  • 1 lemon, 1 tbs juiced
  • 1tablespoons olive oil

Method

Step 1 of 4

Combine thyme, paprika, garlic, lemon juice and oil in a bowl and stir until well combined.

Step 2 of 4

Place cutlets in a shallow container, add marinade and rub into the meat. Set aside for 30 minutes to allow for the flavours to penetrate.

Step 3 of 4

Meanwhile, chop or process the mint, parsley, capers and anchovies. Combine in a bowl with chilli flakes. Stir in extra olive oil and season with salt. Set aside.

Step 4 of 4

Preheat barbecue hotplate to medium-high. Cook cutlets, turning once, until done to your liking. Transfer to a plate, cover with foil and rest for 3-4 minutes before serving. Serve with mint sauce.
