  • 1/2 cup pear cider
  • 1 lemon, rind grated
  • 1 1/2tablespoons olive oil
  • 1tablespoons thyme leaves
  • 4 pork loin cutlets

Method

Step 1 of 3

Preheat oven to 200°C. Brush pork with a little of the oil and season. Heat a frying pan over medium-high heat. Add pork and brown on both sides, then reduce heat to medium and cook for 5 minutes. Transfer to an ovenproof dish and bake for 8-10 minutes until cooked through.

Step 2 of 3

Meanwhile, heat remaining oil in the same pan over medium-low heat. Add the fennel and cook, stirring often for 5 minutes until soft. Add pear, lemon rind, thyme and cider and simmer gently for 5 minutes or until thickened slightly.

Step 3 of 3

Remove pork from oven and stir any juices into fennel mixture. Spoon onto plates and top with pork to serve.
