Pork Saltimbocca With Potatoes

- 2 onions, thickly sliced
- 4 slices prosciutto
- 1/4 cup olive oil
- 4 pork cutlets, fat trimmed
- 1/4 cup fresh sage
- 2 cup green beans, steamed (to serve)
- 500grams potatoes, thickly slice
Method
Step 1 of 2
Preheat oven to 220°C. Line a baking pan with foil. Pour 1 tbs of the oil over base of pan. Season with salt and pepper.
Step 2 of 2
Lay onion slices in pan, turning to coat in oil. In a bowl, toss together remaining oil, potato and sage to coat. Add to pan. Cook for 10 minutes. Push vegetables to one end of the pan and add pork. Season pork. Roast, turning halfway through cooking time, for 20 minutes or until pork is golden and cooked through. Place prosciutto slices on cutlets. Cook for a further 5 minutes or until golden. Serve with steamed green beans.
