- 800grams frozen mixed vegetables
- 1 cup polenta
- 1/2 cup parmesan, finely grated
- 1 1/2 cup reduced-fat milk
- 600grams pork fillet, fat trimmed, cut in half crossways
- 2tablespoons olive oil
- 20grams fresh sage
- 8 slice prosciutto

Method
Step 1 of 4
Wrap prosciutto around pork fillets. Heat oil in a large frying pan over medium-high heat. Cook sage for 1 minute or until golden and crisp. Transfer to a plate lined with paper towel.

Add pork to pan. Cook for 10 minutes, turning, or until pork is golden and just cooked through.

Meanwhile, bring milk and 2 cups cold water to the boil in a large saucepan over high heat. Add polenta in a thin, steady stream, whisking constantly, until combined. Reduce heat to medium-low. Cook, stirring occasionally, for 10-15 minutes or until soft. Remove from heat and season with salt and pepper. Stir in parmesan.

Cook vegetables according to packet directions. Drain. Slice pork and serve with polenta and vegetables. Scatter with sage.
