- 40grams butter, melted
- 600grams skinless snapper fillets
- 800grams washed red skinned potatoes
- 2tablespoons parsley leaves, chopped (to garnish)
- 1tablespoons capers in vinegar, drained, chopped
- 1 lemon, wedges (to serve)
- 1/2 cup parmesan, finely grated
- 1 cup mayonnaise
- 1 cup day-old breadcrumbs
- 1tablespoons rice bran oil
- 2tablespoons dill, chopped

Method
Step 1 of 5
Preheat oven to 200°C. Line 2 large baking trays with baking paper.
Step 2 of 5
Peel potatoes and cut into 1cm-thick long chips. Pat dry with paper towel. Toss with oil and season with salt. Spread on a tray in a single layer.

Place into oven on top shelf. Bake for 20 minutes, then move to the bottom shelf and bake for a further 10-15 minutes or until golden.

Meanwhile, combine breadcrumbs, parmesan, dill and capers in a bowl. Add butter and mix well to combine. Cut fish into pieces and place onto tray. Top with crumb mixture.

Bake for 8-10 minutes on top shelf of oven or until golden and fish is cooked. Garnish with chopped parsley and serve with chips, tartare sauce and lemon wedges.
