  • 1 baby cos lettuce, cut into wedges
  • 2teaspoons balsamic vinegar
  • 1 lemon, wedges (to serve)
  • 2tablespoons olive oil
  • 300grams green beans, trimmed
  • 1/4 cup walnuts, chopped
  • 2 T-bone steaks, fat trimmed
  • 250grams cooked whole fresh beetroot, grated
  • 1/2 cup caramelised onion jam
  • 1 clove garlic

Method

Step 1 of 4

Preheat a barbecue plate or large frying pan over high heat. Rub steaks with 1 tbs oil. Season. Cook on barbecue for 4-5 minutes on each side for medium-rare or until cooked to your liking. Cover with foil and set aside for 5 minutes to rest.

Meanwhile, combine beetroot, jam and vinegar in a bowl.

Heat remaining oil in a pan. Cook beans for 2 minutes, turning, or until tender but crisp and bright green. Toss through garlic and walnuts, cooking 1 minute.

Step 4 of 4

Cut along steak bones to remove meat. Thickly slice steak. Serve on a platter with lettuce, beetroot relish, beans and lemon wedges.
