  • 1/2 bunch fresh parsley
  • 1 pizza base
  • 1 pinch dried chilli flakes (to taste)
  • 1tablespoons dried oregano (save 1/2 tbs dried oregano, to taste for chimichurri recipe)
  • 1tablespoons red wine vinegar
  • 50milliliter crushed tomato
  • 40grams roasted pepper strips
  • 90grams mozzarella
  • 150grams rump steak
  • 1/2 cup olive oil
  • 1 clove garlic

Method

Step 1 of 8

Place a pizza stone on a covered barbecue, close hood and preheat on high heat for 10-15 minutes.

Step 2 of 8

Season steak with rock salt and pepper.

Step 3 of 8

Chargrill steak until medium-rare, then set aside to rest.

Step 4 of 8

Preheat barbecue again for further 5 minutes with hood closed.

Place pizza base on preheated stone and cook until it starts to colour. Flip pizza base and repeat process.

Spread crushed tomato on base to completely cover pizza base, sprinkle with chilli flakes, half the cheese, dried oregano and roasted red pepper strips. Finish with remaining cheese and cook with closed hood for 5-10 minutes.

Meanwhile, to make chimichurri, finely chop garlic and parsley. Add red wine vinegar and olive oil. Add 1 tsp salt, 1 tsp pepper, chilli flakes and dried oregano (it should taste quite sharp).

Step 8 of 8

Remove pizza from barbecue and place on a cutting board. Thinly slice steak and arrange on pizza. Sprinkle over chimichurri dressing and extra parsley.
