- 2teaspoons onion salt
- 1 cup self-raising flour
- 2tablespoons cornflour
- 8 jalapenos, split, deseeded
- 500grams chicken thighs (from the deli)
- 1/2 cup semolina
- 1/2teaspoons cayenne pepper
- 2teaspoons ground cumin
- 1tablespoons paprika
- 1 lemon, cut into wedges (to serve)
- coleslaw (to serve)
- 1 1/2 cup buttermilk (see tip)
- 50grams cream cheese with spring onion and chives
- 1 cup tasty cheese, grated
- 1 cup canola oil
- 500grams drumsticks
Method
Step 1 of 5
Combine spices in a small bowl. Rub well into chicken pieces and place in a shallow dish. Pour over buttermilk, turning to coat and marinate in the fridge for 1 hour.

Meanwhile, preheat oven to 220°C. Line 2 baking trays with baking paper. Combine flour, semolina and cornflour in a bowl. Set aside. Mix cheeses together in a bowl. Fill each jalapeño half with cheese mixture. Lay filled jalapeños onto a baking tray.

Heat oil in a deep frying pan over medium-high heat. Remove chicken pieces from buttermilk, allowing excess to drip off. Coat in flour mixture and place onto second baking tray.

Fry chicken pieces for 4 minutes each side until golden brown. Transfer to tray and bake for 20 minutes until cooked through. Add tray with jalapeños to oven and cook along with chicken for 10 minutes.

Serve chicken with jalapeños, coleslaw and lemon wedges.
