  • 400grams diced Italian tomatoes
  • 200grams danish feta, crumbled
  • 1packets baby leaf salad mix (to serve)
  • 8 large pork schnitzel
  • 2tablespoons olive oil
  • 1 bunch sage, leaves removed, chopped
  • 8 slices pancetta
  • 3/4 cup tasty cheese, grated

Method

Step 1 of 4

Combine feta, tasty cheese and 2 tablespoon finely chopped sage leaves in a bowl. Season with salt and pepper.

Step 2 of 4

Lay schnitzels on a board. Top with a slice of pancetta. Form heaped tablespoons of cheese mixture into 8 sausage shapes and place onto end of each schnitzel. Roll up to enclose filling. Secure with kitchen twine or toothpicks.

Step 3 of 4

Heat oil in a large non-stick frying pan over medium-high heat until hot. Add the remaining sage leaves and fry until crisp and bright green. Transfer sage to a plate lined with paper towel.

Step 4 of 4

Add pork rolls to frying pan. Cook for 8 minutes or until browned on all sides. Transfer to a plate. Add tomatoes and stock to pan. Bring to the boil. Return rolls to pan. Simmer for 8 minutes. Turn and cook for 8 minutes or until rolls are cooked through. Remove twine. Serve rolls with sauce, sage and salad.
