  • 1/2 cup fresh lime juice
  • 2teaspoons chilli flakes
  • 2teaspoons smoked paprika
  • 3 clove garlic, crushed
  • 2tablespoons canola oil
  • 1/4 cup orange juice
  • bamboo skewers, soaked in water

Method

Step 1 of 2

Cut fillets into 4 pieces each. Thread onto skewers and lay in a shallow baking dish. Whisk juices, oil, chilli, paprika and garlic together in a bowl. Pour over skewers and chill for 1 hour to marinate.

Step 2 of 2

Preheat a chargrill pan or barbecue grill over medium-high heat. Cook skewers for 5 minutes each side or until cooked and lightly charred. Serve with sliced lime. Tip 1: Add extra elegance and flavour to these skewers by serving with finely sliced chargrilled capsicum. Tip 2: Serving food on platters means everyone can help themselves.
