  • 3 baby fennel
  • 1/2 cup pure cream
  • 4 oranges
  • 1tablespoons wholegrain mustard
  • 600grams free range chicken stir fry strips
  • 1/2 cup kalamata olives
  • 150grams chive & onion cream cheese
  • 1/4 cup olive oil
  • 2tablespoons chives, chopped (to serve)

Method

Step 1 of 2

Using a vegetable peeler or sharp knife, very thinly shave or slice fennel. Put into a large bowl. Remove skin and pith from 3 oranges and cut into segments. Add to fennel with olives. Juice remaining orange, place into a separate bowl and whisk in 2 tbs of oil. Season with salt and pepper.

Heat remaining oil in a frying pan over medium-high heat. Cook chicken, in batches, for 5 minutes or until golden and cooked through. Transfer to a bowl. Add cream cheese, cream and mustard to pan. Stir until smooth. Return chicken to pan and cook for 2 minutes or until heated through. Season with salt and pepper. Serve chicken with fennel salad and top with chopped chives.
