  • 2tablespoons parsley, chopped
  • 1/2 punnet cherry tomatoes, quartered
  • 1tablespoons red wine vinegar
  • 400grams can chickpeas, drained
  • 1packets pork porterhouse
  • 2tablespoons olive oil

Method

Step 1 of 4

Heat a fry pan or grill plate and lightly oil.

Step 2 of 4

Place pork porterhouse in heated pan or grill pan, cook for 6 minutes on one side. Turn and cook for a further 4 minutes or until cooked through.

Step 3 of 4

In a bowl, combine chickpeas, cherry tomatoes, parsley, red wine vinegar and olive oil. Season to taste.

Step 4 of 4

Spread salad on plates and top with thinly sliced porterhouse for a light fresh meal.
