- 3/4 cup milk
- 2 sweet berry truss tomatoes
- 5milliliter virgin olive oil spray
- 1 lime, juiced
- 1teaspoons dried mixed herbs
- 1/2teaspoons smoked paprika
- 2tablespoons thyme leaves, plus extra thyme sprigs to garnish
- 3 corn cobs, kernels removed
- 6 wholegrain wraps
- 1 1/2teaspoons chipotle seasoning
- 1 cup buttermilk
- 1/3 cup grated tasty cheese
- 80grams light cream cheese, at room temperature
- 750grams chicken thigh fillets, cut into 3cm pieces
Method
Step 1 of 3
Combine buttermilk, seasoning, herbs, paprika and lime juice in a bowl. Add chicken and stir to coat. Cover and refrigerate for 30 minutes.

Meanwhile, preheat oven to 200°C. Line a baking tray with baking paper. Whisk cream cheese and milk in a bowl. Stir in corn and thyme, and season. Transfer to a 6-cup capacity baking dish and sprinkle over tasty cheese. Bake for 25-30 minutes or until corn is soft and cheese is golden.

Thread chicken onto 6 metal or soaked bamboo skewers. Heat a frying pan over medium heat. Spray with oil and cook skewers, in batches, for 3 minutes on each side or until golden. Transfer to tray. Add tomatoes and bake for 10 minutes or until cooked through. Garnish skewers with extra thyme and serve with corn, tomatoes and wraps.
