- 1 pinch black pepper
- 400grams solanato tomatoes, halved

Method
Step 1 of 3
Season chicken with salt and pepper. Heat a large non-stick frying pan over medium-high heat. Spray with oil spray and cook chicken for 4 minutes each side until golden and cooked through.
Step 2 of 3
Reduce heat to low. Top chicken with some of the spinach leaves and then cheese. Cover with a lid and cook for 2 minutes until spinach has wilted and cheese has melted. Remove to serving plates and keep warm.
Step 3 of 3
Add tomatoes and onion to pan. Toss for 1 minute to warm. Slice chicken and serve with remaining spinach and salsa.
