  • 2teaspoons lemon juice
  • 1/3 cup egg mayonnaise
  • 1 chorizo (diced)
  • 4 sprig continental parsley
  • 1 iceberg lettuce, outer leaves removed, cut into 6 wedges
  • 1/4 cup extra virgin olive oil
  • 1/2teaspoons dried chilli flakes
  • 3teaspoons ground cumin
  • 1teaspoons ground turmeric
  • 1 1/2teaspoons sweet smoked paprika

Method

Step 1 of 5

Place spices, chilli, 1/4 tsp sea salt and oil in a small bowl, and mix well to combine. Set aside.

Step 2 of 5

To make the dressing, whisk all the ingredients and 1 tbs water together until smooth. Set aside.

Step 3 of 5

Heat a small frying pan over high heat and a chargrill pan over high heat. Add chorizo to frying pan and cook for 2 minutes or until golden. Transfer to a plate.

Step 4 of 5

Brush cut sides of lettuce wedges with spiced oil. Chargrill, in 2 batches, for 2 minutes on each side.

Step 5 of 5

Arrange lettuce wedges on a platter, top with chorizo, dressing and parsley, and serve.
