  • 2 chorizo, cut into 1.5cm-thick pieces
  • 6 brussels sprouts, bases trimmed
  • 2tablespoons continental parsley (to serve)
  • 1/4 cup pure maple syrup
  • 60grams garlic butter, melted
  • 1tablespoons olive oil
  • 12 scallops
  • 6 rashers streaky bacon, halved

Method

Step 1 of 4

Place sprouts in a microwave-safe bowl with 1/4 cup water. Cover with a double layer of plastic wrap. Microwave on high for 2 minutes. Drain and cool. Halve lengthways.

Step 2 of 4

Roll bacon and thread alternately onto 6 skewers with sprouts. Combine syrup and oil in a small bowl and brush over skewers.

Step 3 of 4

Thread scallops alternately with chorizo onto additional 6 skewers. Brush with garlic butter.

Step 4 of 4

Heat a chargrill pan or barbecue plate over medium-high heat. Add skewers and cook for 2 minutes on each side, brushing with syrup or butter, or until charred and cooked through. Satter over parsley and serve.
