  • 600grams chicken breast, cut into 2cm cubes (use two breasts)
  • 2teaspoons sumac (or to taste)
  • 2tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 2centimeters fresh ginger, chopped
  • 1/2teaspoons chilli flakes, optional
  • 1 large lemon, zest and juiced (or two small)
  • 1tablespoons corn flour
  • 1tablespoons soy sauce
  • 1teaspoons sugar
  • 1/2 red capsicum, seeded and cubed
  • 1 bunch broccolini
  • 1/3 cup shelled pistachios
  • 1 green chilli (optional)
  • 1 red chilli (optional)
  • 1/2 cup coriander leaves
  • 250grams fettuccini
  • 1/2 cup chicken stock (or vegetable stock)

Description

Easy tasty dish for the family, great way to try sumac and to use those pistachios.

Method

Step 1 of 4

Collect all ingredients. Dice chicken, place into large freezer bag together with sumac and shake to coat, set aside. Chop onion, garlic and ginger, zest the lemon and juice, about 1/3 cup. Place lemon juice, zest, cornflour, ginger, and soy sauce in a bowl with chicken stock mix well, set aside.

Step 2 of 4

Heat oil over high heat in a large pan, when hot cook chicken in batches until brown on all sides, 3 or 4 minutes per batch, transferring to a plate to keep warm, Lower heat to medium. In the same pan cook onions and garlic until soft, 2 or 3 minutes, add capsicum and cook a further minute or so.

Return chicken to pan together with sauce mixture and bring to boil, turn heat down and simmer for 5 or 6 minutes. add more stock if sauce is too thick. (Now is a good time to put a pot of salted water on for the fettuccine cook as per packet instructions) Add Broccolini during the last 2 minutes of cooking.

Serve chicken and broccolini with the fettuccine garnished with chilli rings (if using) pistachios and coriander leaves.
