- 400grams cooked turkey
- 50grams butter
- 60grams cream
- 2 cups vegetable stock
- 200grams mushrooms
- 1 medium white onion, peeled and chopped
- 50grams bacon lardons
- 1tablespoons parsley, chopped
- 1teaspoons nutmeg
- 1/2teaspoons salt
- 1teaspoons cracked black pepper
- 2tablespoons chives, garnish
Description
This creamy fricassee recipe adds turkey to this classic French dish.
Method
Step 1 of 4
Heat up a large pot to a medium heat and melt the butter. Incrementally add the flour while mixing. Now incrementally add the stock while mixing and lower the heat to allow to simmer for 10 minutes stirring occasionally.
Step 2 of 4
In a non-stick pan on a medium heat, fry the bacon lardons for 3 minutes. Add the mushrooms and onion to the pan and cook for a further 3 minutes.
Step 3 of 4
Add the cream to the sauce in the other pan at this stage and stir well. Tear or dice your turkey and add to the pan with the spices and herbs and cook for 1 minute.
Step 4 of 4
Now add the turkey and veg to the pot with the cream and allow to simmer for 10 minutes. Serve with a choice of condiments and some chives to garnish.
