  • 1/2 cup dried apricots
  • 2tablespoons flour
  • 750grams chicken breast fillets
  • 1 orange, rind
  • 250grams cream cheese
  • 1 cup chicken stock
  • 1tablespoons olive oil
  • 1tablespoons chives, finely chopped
  • 2tablespoons flaked almonds, toasted
  • 1/3 cup orange juice

Method

Step 1 of 5

Preheat oven to 180°C. Place 3 chicken breast fillets on a chopping board. Cut each fillet in half through the centre to make 2 thin schnitzels.

Combine room temperature cream cheese, chopped dried apricots, toasted flaked almonds, finely chopped chives and orange rind in a bowl. Spread mixture onto each piece of chicken. Roll up to enclose filling and secure with kitchen twine.

Heat olive oil in a large frying pan over a medium-high heat. Cook for 3 minutes or until golden on all sides. Transfer to baking dish. Bake for 10 minutes or until cooked through.

Step 4 of 5

Stir flour into pan juices in frying pan until smooth. Gradually stir in chicken stock and orange juice. Simmer until thickened. Strain into a jug. Remove twine from chicken and slice.

Step 5 of 5

Serve with steamed beans and sauce.
