- 150grams pork scotch fillet
- 1 medium potato, boiled
- 1/2 red onion, sliced
- 10 pistachios, chopped finely
- 2tablespoons panko breadcrumbs
- 1/2teaspoons chilli flakes (optional)
- 1tablespoons olive oil
- 1/4 lemon, juice only
- 1/2tablespoons butter (or other sauteing medium for pork)
- 1 pinch sugar
- 1/2tablespoons butter for onion
- 2tablespoons plain yoghurt (or milk)
- 1 pinch salt
- 1 pinch pepper
Description
A very happy meal with heaps of flavour! The pork was beautifully tender and it was a markdown!
Instruction tip
Add some mustard to the mash if you like. Any piece of boneless pork fillet will be fine in this.
Method
Step 1 of 5
Mix chopped pistachios, panko crumbs, chill flakes (if using), olive oil and lemon juice in a small bowl and set aside.
Step 2 of 5
Heat to medium butter or other sautéing medium in a small frypan and add pork scotch fillet. Cook both sides until done to your preference. The time depends on the thickness of the fillet, I found 3 minutes each side was fine. Set aside to rest.

Add additional butter to the pan and add sliced onions and pinch of sugar. Cook until soft and lightly caramelised. You can mash the potato with salt and pepper, yoghurt (or milk) while the onion is cooking.
Step 4 of 5
Turn on grill. Press crumb mix on top of the pork fillet and toast until the crumb crisps and browns. Watch carefully as the crumb mix has a high fat content and will only take a few seconds.
Step 5 of 5
Plate up and serve.
