Roast Lemon Pork with Parsnips & Cabbage

- 1/4 mini cabbage, finely shredded
- 3 red capsicum, halved, seeds removed
- 1kilograms parsnips, peeled, trimmed, halved lengthways
- 1 pinch pepper (for seasoning)
- 1 pinch sea salt flakes
- 2 small garlic heads, cut in half
- 1kilograms pork leg with bone in
- 1 pinch pink salt ground (to taste)
Method
Step 1 of 8
Preheat oven to 220°C.
Step 2 of 8
Place pork into a large roasting pan. Rub 2 tablespoons of lemon juice into pork skin and sprinkle with sea salt flakes.

Cook pork for 1 hour or until crackling is golden and crisp.
Step 4 of 8
Remove hard core from the centre of the parsnips and cut into large pieces. Add parsnip and garlic to a roasting pan with pork. Roast for 20 minutes. Add red capsicum to a roasting pan.

Roast for 20-25 minutes or until vegetables are tender and golden.

Stand pork for 10 minutes before carving.

Meanwhile, bring 2 cups of water to the boil in a saucepan. Add cabbage and cover. Simmer for 2 minutes or until just tender. Drain. Season with salt and pepper.

Serve pork with parsnips, capsicum and cabbage.
