  • 1tablespoons sea salt flakes
  • 6 yellow peaches, halved, destoned
  • 2tablespoons honey
  • 1 bunch sage, leaves pickled
  • 500grams green beans, trimmed

Description

Bring the family together for a delicious pork loin roast topped with crispy sage, and served with juicy honey-roasted peaches and vibrant green beans.

Method

Step 1 of 4

Preheat oven to 240°C/220°C fan-forced. Place pork on a small greased rack in a large roasting pan. Rub rind with 2 tsp oil and salt flakes. Roast for 45 minutes or until rind starts to crackle.

Step 2 of 4

Toss peaches with honey in a large bowl. Season. Reduce oven to 180°C/160°C fan-forced. Add peaches to pan around rack and roast for 30 minutes or until pork is cooked through. Transfer pork to a large plate and rest for 10 minutes.

Step 3 of 4

Meanwhile, increase oven to 200°C/180°C fan-forced. Remove rack from roasting pan. Baste peaches with pan juices and top with sage leaves. Roast for a further 10 minutes or until lightly browned and sage is crispy.

Step 4 of 4

Cook beans in a saucepan of boiling water for 4 minutes or until just tender, then drain. Top pork with crisp sage, then serve with peaches and beans.
