  • 1 red apple, finely diced
  • 2 cup green beans, steamed (to serve)
  • 1 diced beetroot, finely diced
  • 1 brown onion, finely diced
  • 1/2teaspoons dried chilli flakes
  • 2teaspoons ground cumin
  • 3teaspoons smoked paprika
  • 2tablespoons olive oil
  • 3/4 cup apple cider vinegar
  • 1 cup caster sugar
  • 1 rack of pork (4 cutlets)

Method

Step 1 of 2

Preheat oven to 200°C. Place pork in a roasting pan. Rub 1 tbs of the oil over pork skin and sprinkle generously with sea salt. Roast for 1 hour 20 minutes or until cooked through and golden.

Meanwhile, heat remaining oil in a medium saucepan over medium heat. Add onion, capsicum and apple. Cook, stirring occasionally, for 10 minutes or until softened. Stir in paprika, cumin and chilli flakes. Add sugar and vinegar. Stir until sugar dissolves and mixture comes to the boil. Simmer for 20 minutes or until thickened. Season with sea salt and freshly ground black pepper. Serve pork with chutney and green beans. Note: This recipe makes about 11/2 cups chutney. It is also delicious served with grilled pork chops.
