  • 1 cinnamon stick
  • 2 clove whole cloves
  • 8 black plums, cheeks only
  • 1/2teaspoons chilli flakes
  • 2 star anise
  • 1 pinch cracked black pepper
  • 1tablespoons olive oil
  • 1/4 cup olive oil
  • 1tablespoons apple cider vinegar
  • 1teaspoons apple cider vinegar
  • 200grams Woolworths Leafy Mix
  • 1/4 cup brown sugar
  • 1teaspoons caster sugar
  • 1kilograms pork belly

Method

Step 1 of 6

Preheat oven to 250°C.

Step 2 of 6

Place pork skin side up in a roasting dish. Pat skin dry with a paper towel and then rub with olive oil and 2 tsp salt (see tip).

Bake pork for 20 minutes or until skin has started to crackle. Reduce heat to 150°C and bake for a further 1 hour. Turn up oven again to 250°C and bake for a further 10 minutes or until crackling sounds hollow when tapped with the back of a knife. Remove from oven to rest while preparing the spiced plums.

Meanwhile, to make spiced plums, combine plums, cinnamon, star anise, cloves, chilli flakes, brown sugar, vinegar and 2 tbs water in a small pot over medium heat. Cook, stirring, for 5 minutes or until tender. Season to taste with cracked black pepper.

To make the salad, combine olive oil, vinegar and caster sugar and season to taste. Toss dressing through leafy mix.

Step 6 of 6

Slice pork into six portions. Divide spiced plums amongst plates, top with pork slices and serve with salad on the side.
