- 1/2 bunch coriander, finely chopped
- 1/2 cucumber, finely diced
- 1/2 medium pineapple, puréed
- 1/4 pineapple, finely diced
- 1/2 red onion, finely diced
- 1 lime juiced
- 1tablespoons paprika
- 3/4 cup sweet chilli sauce
- 2 pork rib racks, cut into individual ribs
- 2tablespoons olive oil

Preheat oven to 160°C.
Step 2 of 5
Rub ribs in paprika and season to taste. Drizzle ribs with olive oil and place in a baking dish. Cover with foil and bake for 1 hour or until tender.

Meanwhile, to make the glaze, place pineapple purée and sweet chilli sauce into a medium saucepan over medium heat. Cook for five minutes or until reduced and thickened.

To make the salsa, combine all ingredients and refrigerate until serving.

Remove ribs from oven and increase temperature of oven to 200°C. Use tongs to dip ribs into glaze and return to baking dish. Cook, uncovered, for 10 minutes or until ribs are sticky. Serve with salsa and remaining glaze on the side.
