Barbecue Blueberry Glazed Ribs

- 1 cup blueberries
- 1/2 cup barbecue sauce
- 2tablespoons chipotle seasoning
- 2kilograms pork ribs
- 1tablespoons olive oil
- 2 cloves garlic, finely chopped
Method
Step 1 of 3
Preheat oven to 160ºC. Rub meat with chipotle seasoning and 1/2 tbs salt. Wrap in a layer of non-stick baking paper and a layer of foil. Place in a roasting tray and cook for 1 1/2 hours or until tender.

Place oil in a small saucepan over medium heat. Add garlic and cook for 1-2 minutes. Add blueberries and cook for 2 minutes or until blueberries just start to burst and colour the garlic. Add 1/4 cup water and cook, stirring occasionally and squashing a few of the blueberries with the back of the spoon, for 10 minutes or until reduced. Add barbecue sauce and cook, stirring, for 5 minutes or until mixture is thick and glossy. Set aside.
Step 3 of 3
Remove ribs from foil and baking paper and use a pastry brush to baste with the blueberry glaze. Return to the roasting tray and bake, basting every 5-10 minutes, for 30 minutes or until glossy. Serve.
