- 3 cloves garlic, crushed
- 2teaspoons dried mustard powder
- 125grams can corn kernels, drained
- 1 large carrot, grated
- 1 brown onion, grated
- 3 spring onions, thinly sliced diagonally
- 1/2 cup salted roasted cashews
- 4 cup wombok, shredded
- 1/2 cup tomato sauce
- 1/2teaspoons dried chilli flakes
- 1teaspoons smoked paprika
- 1/4 cup whole egg mayonnaise
- 1.50kilograms pork ribs
- 1/2 cup apple cider vinegar (save 1 tbs apple cider vinegar for later)
- 1 cup brown sugar, firmly packed
- 2 stick celery, thinly sliced diagonally

Method
Step 1 of 4
Place ribs into a saucepan and cover with cold water. Place over high heat and bring to the boil. Reduce heat and simmer for 25 minutes or until just cooked. Drain and cool.

Meanwhile, combine sugar, tomato sauce, vinegar, onion, garlic, mustard, paprika, and chilli in a shallow ceramic dish. Add ribs, turning to coat with marinade. Marinate for at least 2 hours, preferably overnight.
Step 3 of 4
To make salad, combine cabbage, carrot, spring onion, celery, corn and cashews. Mix mayonnaise and vinegar together and toss through salad.
Step 4 of 4
Heat a barbecue grill over medium heat. Drain marinade into a small pan. Cook ribs for 3 minutes each side or until golden. Bring marinade to the boil and simmer for 5 minutes. Serve ribs with salad and sauce.
