  • 2/3 cup maple syrup
  • 1/3 cup brown sugar
  • 1tablespoons Dijon mustard
  • 3 cloves garlic, crushed
  • 400grams brussel sprouts, halved lengthways
  • 5milliliter olive oil cooking spray
  • 475grams pkt classic potato mash
  • 2tablespoons thyme leaves (to serve)

Description

Indulge in sticky-sweet pulled pork that’s glazed in a maple and mustard sauce. This recipe is a winter warming winner on a chilly night.

Method

Step 1 of 4

Preheat oven 180°C/160°C fan forced. Line a large baking dish and baking tray with baking paper.

Step 2 of 4

Combine syrup, sugar, mustard and garlic in a bowl. Remove netting and rind from pork. Place pork in dish and pour over maple mixture. Season. Cover pork with baking paper, then foil. Bake for 3 hours or until tender. Uncover pork and bake for 1 hour, basting with pan juices every 15 minutes or until very tender and golden.

Meanwhile, place sprouts on tray, spray with oil and bake for 30 minutes or until starting to char.

Heat mash according to packet instructions. Using 2 forks, shred pork. Divide mash among plates. Top with pork and sprouts. Drizzle with pan juices and serve scattered with thyme.
