  • 2 cloves garlic, crushed
  • 2 cup risoni
  • 1/4 cup flat-leaf parsley, roughly chopped
  • 2tablespoons honey
  • 2tablespoons wholegrain mustard
  • 2teaspoons olive oil
  • 1teaspoons rosemary, chopped
  • 2kilograms leg of lamb

Method

Step 1 of 4

Preheat oven to 180°C. Line a roasting pan with baking paper. Place lamb in pan.

Step 2 of 4

Combine mustard, honey, garlic and oil. Brush mixture all over lamb. Sprinkle with rosemary.

Step 3 of 4

Roast for 1 hour 20 minutes, for medium or until cooked to your liking. Transfer lamb to a carving board and cover loosely with foil. Set aside to rest for about 10 minutes.

Step 4 of 4

Meanwhile, cook risoni in a large saucepan of boiling, salted water for about 5 minutes or until just tender. Drain and return to pan. Add oil, parsley, lemon rind and juice. Toss with a fork to combine. Cover to keep warm.
