- 2 bunch asparagus, ends trimmed
- 1/2 cup natural sliced almonds
- 4 rasher streaky bacon, chopped
- 1tablespoons olive oil
- 8-10 lamb cutlets
- 600grams butternut pumpkin, cut into 2cm-thick slices
- 1 clove garlic, crushed

Method
Step 1 of 6
Preheat oven to 200°C. Combine oil and garlic and brush over pumpkin. Season with salt and pepper.
Step 2 of 6
Place pumpkin slices on an oven tray lined with baking paper. Bake, turning once, for 30 minutes or until golden and tender. Keep warm.
Step 3 of 6
Meanwhile, heat a non-stick frying pan over medium-high heat. Cook lamb for 1-2 minutes each side until golden. Transfer to oven tray with the pumpkin and cook for 8 minutes or until cooked to your liking.
Step 4 of 6
Place the asparagus in a frying pan over high heat. Cover with boiling water and cook for 3 minutes until bright green. Drain and refresh in cold water.

Heat the butter in a frying pan over medium-high heat. Add the bacon and cook, stirring occasionally, for 2-3 minutes until crisp. Add almonds and cook, stirring constantly, for 1 minute. Add asparagus and toss for 2-3 minutes to warm through. Remove from heat.
Step 6 of 6
Place pumpkin and asparagus mixture on plates. Top with cutlets. Scatter with feta and serve.
