Method
Step 1 of 3
Preheat BBQ grill over medium heat. Using poultry shears, cut along both sides of the backbone and remove.
Step 2 of 3
Place skin side up on a board and press down on the breast to open and flatten the chicken. Lay onto grill rack. Cook for 20 minutes, turning halfway through cooking time.
Step 3 of 3
Move to a cooler part of the barbecue and continue to cook, turning occasionally, for about 40 minutes until cooked through. Serve.
