- 1 red capsicum, seeded and diced
- 1 red chilli, deseeded, finely chopped (optional)
- 2tablespoons mint leaves, shredded
- 1/2 small red onion, finely chopped
- 1teaspoons ground cumin
- 1 pinch pepper (to taste)
- 2 cup jasmine rice, steamed (to serve)
- 440grams can pineapple pieces
- 500grams pork fillet, cut into cubes
- 1tablespoons brown sugar

- 1 pinch salt (to taste)

Method
Step 1 of 5
Soak 8 bamboo skewers in water for 20 minutes before preparing food.
Step 2 of 5
Place diced pork into a bowl and season with cumin, salt and pepper. Stir well to combine.
Step 3 of 5
Drain pineapple pieces and place juice into a small pan with brown sugar and chilli. Bring to the boil and simmer until syrupy. Remove from heat and refrigerate until needed.
Step 4 of 5
Preheat a BBQ to medium-high. Thread pork pieces, capsicum and pineapple pieces onto the skewers. Leftover pineapple pieces can be chopped and added to the dressing.
Step 5 of 5
Spray kebabs with oil and BBQ for 6-8 minutes, turning until browned on all sides and cooked through. Add onion and mint to dressing. Serve kebabs with rice and spoon over the dressing.
