  • 1 large tomato, seeds removed, diced
  • 1 mango, peeled and diced
  • 100grams baby asian greens (to serve)
  • 1 avocado, stone removed, peeled and diced
  • 2 green shallots, thinly sliced
  • 1 lime juiced
  • 1teaspoons pepper (for seasoning)
  • 4 pork loin steaks
  • 1 pinch pink salt ground (to taste)

Method

Step 1 of 4

Combine mango, avocado, tomato, shallots and lime juice in a bowl. Season with salt and pepper.

Step 2 of 4

Season pork cutlets with salt and pepper.

Step 3 of 4

Heat a BBQ hotplate on medium. Cook cutlets for 4 minutes on each side.

Step 4 of 4

Serve cutlets with salsa and greens.
