  • 2 cloves garlic
  • 2kilograms large green banana prawns
  • 1-2 small red chilli
  • 1/4 cup coriander, chopped
  • 1teaspoons ginger, grated
  • 1 lime, rind grated
  • 1 cup mayonnaise
  • 1/4 cup vegetable oil
  • 1tablespoons lemongrass, chopped

Method

Step 1 of 5

Place garlic cloves, grated ginger, red chilli, chopped lemongrass, grated rind of the lime and vegetable oil in a food processor and process until finely chopped. Transfer to a glass bowl.

Step 2 of 5

Remove heads from the prawns and devein, marinade prawns from mixture made in step 1 and cover and refrigerate for 1 hour.

Preheat the BBQ grill on medium-high heat

Step 4 of 5

Meanwhile, stir juice from lime, and chopped coriander into mayonnaise. Thread onto bamboo skewers (see tip).

Step 5 of 5

Cook on BBQ grill for 5 minutes, turning until cooked through. Serve prawns with coriander mayonnaise.
