  • 3 chorizo sausages, sliced 1cm thick
  • 200grams small mushrooms, halved
  • 1 lemon, cut into wedges (to serve)
  • 2teaspoons dried oregano leaves
  • 1tablespoons olive oil
  • 2 clove garlic, crushed
  • 12 bamboo skewers, pre-soaked
  • 600grams chicken thigh fillets, cut into 2cm pieces

Method

Step 1 of 4

Combine chicken, garlic, oregano and oil in a bowl. Cover and marinate in the fridge for 30 minutes.

Step 2 of 4

Thread chicken, chorizo and mushrooms onto skewers.

Step 3 of 4

Heat a chargrill pan or BBQ on high. Cook skewers, turning occasionally for about 8 minutes or until chicken is cooked through.

Step 4 of 4

Remove from heat and serve with lemon wedges.
