- 4 ripe tomatoes, roughly chopped
- 1 green capsicum, sliced
- 1 Lebanese cucumber, thickly sliced
- 1 red onion, sliced
- 1/4 cup continental parsley leaves
- 2 lemon, 1 juiced, rind finely grated (1 cut into wedges to serve)
- 1 pinch pepper (for seasoning)
- 50grams Greek feta
- 600grams pork steaks, cut into 1cm pieces
- 50grams kalamata olives
- 2tablespoons olive oil
- 1tablespoons olive oil (for dressing)
- 3teaspoons dried oregano
- 1 pinch sea salt ground (to taste)

Method
Step 1 of 4
Combine pork with oil, lemon juice, lemon rind and 2 teaspoons of the oregano. Season with salt and pepper. Set aside to marinate for at least 1 hour.

Meanwhile, combine tomatoes, cucumber, capsicum and onion in a salad bowl. Sprinkle with remaining oregano and season with salt and pepper. Pour over olive oil and toss to coat. Set aside.
Step 3 of 4
Thread pork onto metal or bamboo skewers. Heat a BBQ or chargrill plate on high heat. Cook skewers for 8 minutes, turning frequently, or until well browned.
Step 4 of 4
To serve, crumble feta over salad. Add olives and parsley. Serve salad with souvlaki skewers and a wedge of lemon.
